All the ingredients

  • 450 g d’aucy yellow beans (large 800 g can)
  • 2 eggs
  • 80 g red pepper
  • 80 g onion
  • 100 g potato flakes
  • to taste spring onion (green onion or chives), Antilles pepper
  • 1 small garlic clove
  • 4 g colombo powder

The preparation stages

  1. Drain and roughly mash the beans with a knife.
  2. Crack the eggs into a bowl and beat them, then add the beans, onion, finely diced pepper, finely minced spring onion, the spices, minced garlic, and finally the potato flakes. Add salt and hot pepper to your taste.
  3. Mix well, and leave to rest for 15 minutes.
  4. Form into walnut-sized balls, then fry in hot oil : immerse for 3 minutes, until golden brown.
  5. Serve as tapas, hors d’oeuvres, or as a side dish.
