All the ingredients

  • 400 g d’aucy lentils (medium 400 g can)
  • 400 g d’aucy peeled tomatoes (medium 400 g can)
  • 2 onions
  • to taste olive oil
  • 1 bunch of coriander
  • to taste salt, ras-el-hanout
  • 4 dried apricots

The preparation stages

  1. Peel and mince the onions. Quarter the tomatoes.
  2. In a tagine or casserole, brown the onions in olive oil, then add the tomatoes and leave to simmer over a low flame for a few minutes.
  3. Next, add the lentils, apricots, finely minced coriander, and spices to your taste.
  4. Cover and leave to simmer for 10 minutes, then adjust the seasoning.
  5. Serve with couscous, harissa, and lamb skewers.
